Easy, Delicious Fruit Salad

fruit-marked.jpgI meant to post this before now to give you time to contemplate its holiday breakfast inclusion possibility, but if you’ve got family in town for a few days, there should be plenty of occasions to whip up this super-delicious, marginally-fancy-looking fruit salad. It would make a nice light side dish at dinner, or the starring attraction of your breakfast, and the best part is, it’s beyond easy: throw some fruit together in a bowl, dump in some glop, stir, and VOILA. You = gourmet magician.

You need:

• Any kind of fruit you want. I use apples, bananas, pineapple, small tangerines, kiwis, and grapes. Peel, cut, and slice everything as you wish.

• Vanilla yogurt

• Honey

• Extra credit: poppy seeds, whipped cream

Mix the yogurt with a tablespoon or two of honey, you want enough to lightly coat all your fruit. If the yogurt is too thick and clingy, add in some milk to make it smoother. If you want to get all feisty, add some whipped cream to this mixture until a Finger Taste Test results in a “Delicious” grade.

Dump all your fruit into a big bowl, and toss it with the yogurt mixture until your fruit is coated (but not swimming). Sprinkle the whole thing with some poppy seeds, if you like, and serve immediately.

So good and refreshing, it almost makes you feel less guilty about all those damn cookies.

I’ve never tried sweetening my fruit salad with honey, I usually use lemon curd to avoid the dairy, but I bet plain honey would be good too…hmmmm, maybe with some cinnamon to get all festive and what-not…
