Fig-Gorgonzola crostini with caramelized onions

figs.jpgThis is a recipe I stole from my friend Chiara, who once cooked it for me at my house while we spent an afternoon making marble magnets (a very easy, highly satisfying crafty-type-activity, should you be looking for such a distraction—the results of my one and only foray into the DIY world still adorn my fridge today). It’s a simple, delicious appetizer that makes you look like you’re some kind of fancy-ass gore-met cheflike person. Especially if you prepare it while wearing a classy apron.

You’ll need:

• Some dried figs, preferably Black Mission. I’ve found these in the dried fruit section of the baking aisle.
• A lemon
• A large onion, or a couple medium-sized ones
• Some crumbled gorgonzola cheese
• A baguette

Caramelize the onions until they are limp and brown. While the onions are cooking, chop the figs (in a food processor, if you have one), and put them in a pot with enough water to cover. Squeeze some lemon on top, then bring the mixture to a boil. Simmer until you have a thick, jammy pot of fig-goop.

Slice your baguette into crostini-sized pieces. Top each crostini with a dollop of onions, followed by the fig mixture, followed by some crumbles of gorgonzola. Put the crostinis in a 350 F degree oven for about ten minutes, or until the cheese is melted.

It’s sweet, and gooey, and crunchy, with the savory bite of gorgonzola on top. Delicious! Enjoy.

I remember that day of marble magnet making because you guys had so much fun, my son and I made marble magnets the next weekend. We still have all of them on our fridge. But I can’t get him to eat figs or gorgonzola cheese. Thanks for yet another walk down memory lane.
